Oh, dandelions! Who doesn't love these whimsical puffballs that make any garden look enchanted and extra magical? But did you know that dandelions are edible? Yes that's right! These lovely flowers are not just delightful to see, but they're tasty edible flowers, too!


That's why today, we're bringing you this yummy dandelion syrup recipe that you and your little ones can make in no time!


Now, this dandelion honey is not actually honey. No bees are involved in the process, making it a perfect option as a vegan honey alternative. It's more like syrup, but the consistency is just like honey, and most importantly - it's just as delicious and sweet as the real thing!

Dandelion Honey Recipe



Dandelion Honey Ingredients:


  • 3 cups of Dandelion petals
  • 3 cups of water 
  • Half a lemon
  • Sugar (in step 4, you will weigh the dandelion water and use the same weight of sugar) 

You will also need a saucepan, measuring jug, sieve, 2 bowls, scales, jar. 




How to make Dandelion Syrup:




STEP 1 - Dandelion Scavenger Hunt:



First things first, head outdoors and with your kids and collect a bowl full of fresh dandelion flowers. Do make sure the area you're picking the flowers from is clean and unpolluted. 


To show your little ones how to be more environmentally friendly, encourage them to leave some dandelions and not pick all of them. Use this opportunity to explain how they're helping the bees by doing so!


Once you have the flowers, put them in a bowl and let them sit for a little while. This is to make sure any little bugs in the dandelions have time to run away.

STEP 2 - Prepare the dandelion petals:




Once some time has passed, take the dandelion flowers and remove their petals.

STEP 3 - Boil your dandelion flowers:



Take a saucepan and add three cups of water to it. Place the petals in the saucepan and squeeze half a lemon of lemon juice on top. 


Now, bring to boiling point and then simmer for about 30 minutes (or more).

STEP 4 - Prepare your syrup:



Strain all the mixture through a sieve into a bowl, making sure you give it a good squeeze to get all the liquid out. Discard the petals.


Now you will be left with a yellow liquid, this is your dandelion water. Weigh the dandelion water and prepare a second bowl with the same weight of sugar.

STEP 5 - Add the sugar:



Return the dandelion water to the saucepan. Once the dandelion water is boiling add the sugar you weighed out in the previous step and give the mixture a stir. 


Continue to stir this mixture until the sugar has fully dissolved and the dandelion syrup has thickened up a little. The syrup will continue to thicken as it cools down.




STEP 6 - Bottle it up!



Pour all your dandelion honey into a glass jar and leave it too cool.

STEP 7 - Enjoy!



Now your dandelion honey is ready! Invite your little ones to enjoy it on a piece of bread.
